The wine undergoes "white" vinification with gentle pressing. The first fermentation of the prime must takes place in steel at a low temperature (18°C) to preserve the varietal aromas. The effervescence is achieved in an autoclave using the Martinotti-Charmat method. It then undergoes a lengthy aging process on the yeast to enhance its bouquet and taste. The wine is bottled under pressure to prevent any loss of effervescence (isobaric bottling).
The wine boasts exuberant white foam with fine, continuous, and persistent bubbles. It carries a fresh floral scent with hints of rose. The taste is dry, fresh, soft, and balanced.
