White winemaking at a temperature of 18°C, malolactic fermentation not carried out.
It does not have a high alcohol content, producing a dry and pleasant wine. The specification "Gialla" in Ribolla Gialla comes from the yellow color of the grape when ripe. It's a rigorous grape variety, resistant to diseases, with late budding. However, its grapes mature quickly and are rich in must. The enticing bouquet is reminiscent of woodland scents, acacia, and flavors of chestnut and geranium leaves.
Recommended for cold appetizers with sour or sweet-and-sour sauces, soups, especially velvety creams, vegetable-based first courses, and sauced fish dishes. We particularly love it with crustaceans, oysters, and sea truffles.
