The grapes are then separated from the stalks and drop by gravitation into the tanks where they undergo fermentation for about 25-30 days without the addition of selected yeasts.
The wine evolves in barriques for about 12 months and later in a bottle for at least a year.
The intense color with viola nuances, the good acidity, the finesse and the pureness of the characteristic perfumes of this rare indigenous variety, make the Pugnitello a wine with a great personality.
