Winemaking Process:

  • Harvesting Period: From 5th to 10th November
  • Vinification:
    • A short withering period
    • Extended skin contact (20–22 days) with pump-overs in air
    • Must is settled in large barrels
  • Aging:
    • 12 months in 25‑hectoliter barrels
    • Followed by an additional 12 months aging in a barrique
    • Finally, the wine rests in bottles for 12 months

Chemical & Sensory Characteristics:

  • Alcohol: 15% Vol.
  • Optimal Drinking Window: 8–10 years from release
  • Color: Ruby red
  • Aroma (Nose): Complex and evolving; features fruity and flowery nuances reminiscent of small wild berries, red flowers, and cherry
  • Taste (Palate): Warm, balanced, and tannic with spicy nuances derived from the barrique aging
  • Food Pairing: Pairs excellently with lamb meat
