Charmat method
The winemaking process involves a "white vinification" with gentle pressing. The must is partially fermented in stainless steel tanks at a controlled temperature, ensuring a significant natural residual sugar. The sparkling process is carried out in an autoclave, followed by bottling without any loss of pressure.
This wine boasts a lively white foam and a continuous, persistent fine-grained perlage. The aroma is intense, aromatic with hints of sage flowers, musk, and ripe fruit. The taste is sweet, fresh, and light, with a delightful fruity and floral aftertaste that lingers on the palate.
It is best served chilled, at 8°C
Recommended with baked pastries and non-acidic fruits, particularly peaches, strawberries, and raspberries.
