The winemaking process uses "cold vinification," involving a brief cold maceration of the skins. Only partial fermentation of the must is carried out, after which it's stored cold and shielded from air, preserving its inherent aromas until the sparkling process is initiated in an autoclave. The result is a wine with limited alcoholic strength.
On the visual and olfactory fronts, the wine presents an energetic red foam and a glossy purple color. Its pronounced scent carries notes of blackberry, ripe grapes, and violets. On the palate, this wine delights with a sweet taste, thanks to a high natural residual sugar content, and exhibits a sparkling, soft profile, ending with seductive hints of wild berries, fading into a slightly bitter almond note.
