Destemming, crushing, and cold maceration for 2 days, after which fermentation occurs at a controlled temperature in steel tanks. The maceration lasts 20 days.
In wood, with a minimum aging of 38 months, of which 18 are in barrels.
With a garnet red color and orange reflections, the ethereal and pleasant aroma is intense. Its taste is austere but velvety, robust, and harmonious. Elegant with sweet and soft tannins.
Red meat dishes, game, and hard or aged cheeses. Highly recommended with truffle dishes.
